Our Shop

Bespoke Chocolates is an award-winning artisanal chocolaterie established in New York City in 2008. Bespoke Chocolates specializes in the production of luxury handcrafted chocolates created with the freshest ingredients. Our chocolates are of the finest quality on the market, marrying classic European techniques with modern flavor profiles. Our Bespoke Chocolate shop, located in New York City’s East Village, features an open kitchen, allowing our guests to watch and interact with our chocolatier. It also serves as a unique destination for experiencing chocolate through regular in-store classes, tastings open to the public, and private sessions with our chocolatier for groups or corporations.


Our Chocolatier

web_headshot.gif Rachel Zoe Insler is chocolatier and co-owner of Bespoke Chocolates. She is classically trained, having studied with Master Chocolatier Keith Hurdman at London's Melt Chocolates in Notting Hill. While working in London, Rachel had the good fortune to spend her free time traveling and discovering the countless tiny but exquisite chocolateries that seem to be everywhere in cities like Paris, Brussels, and Rome.

Deeply inspired by her visits to these European artisanal chocolate shops, Rachel decided to bring that experience to New York by opening Bespoke Chocolates in her beloved East Village neighborhood. Her signature chocolate, the Pretzel-Covered Sea Salted Caramel, uses handmade pretzels and dairy products fresh from the Greenmarket and was recognized as the Best Confection in the 2008 Golden Scoop Awards.

Prior to pursuing her chocolate shop dreams, Rachel worked in the pastry departments of New York City's Union Square Cafe and Hudson Yards Catering. She holds a Grande Diplome in Pastry Arts from the French Culinary Institute. In what seems like another life, Rachel was engaged in academic cognitive neuroscience research, but these days she’d much rather make you a chocolate than scan your brain.
